Thai Red Curry

Preparation Method

  1. Finely chop the shallots, and fry them in the oil until soft.
  2. Finely dice the garlic and add to shallots, along with cumin, chilli, pepper, cinnamon and the chicken. Stir fry until the meat is sealed.
  3. Chop the broccoli into florets and add to the chicken.
  4. Using a food processor or hand blender, puree the rest of the ingredients together and pour over the chicken.
  5. Bring the heat up until the sauce simmers; then leave to simmer for 20 minutes or until the chicken is cooked through.
  6. Prepare the Slim Rice as per package instructions (drained and rinsed) and serve on the side.
  7. Taste and season if needed - add more chilli if you like it hotter!


  • 1 pack of slim rice
  • 600-800g diced chicken
  • 3 tomatoes
  • 1 tsp cumin
  • 1 tsp chilli flakes
  • 1/2 tsp pepper
  • 1/4 tsp cinnamon
  • 4 shallots
  • 1 garlic clove
  • 1 stalk of lemongrass
  • 1 broccoli
  • 1/2 cup of coriander leaves
  • 1/2 cup basil leaves
  • 1/2 fresh lime, squeezed
  • Fresh red birds eye chillies to taste
  • 2 cans of coconut milk
  • 6 tbsp of olive oil
