Avocado and Ricotta Pasta

212cal - 9g carbs - 6g protein - 2g sugar - 13g fibre - 16g fat

Ingredients:
  • 1 Eat Water Fettuccine
  • 1/2 medium avocado
  • 3 tbsp ricotta cheese
  • 50ml plant based milk
  • Chopped parsley
  • Parmesan cheese to top if desired
Method:
1. Prepare the Slim Pasta Fettuccine as per package instructions (drained and rinsed).
2. In a bowl mash the avocado, add the ricotta, and plant based milk and mix until well incorporated
3. Add the fettuccine and toss together
4. Serve and top with parsley and Parmesan
