Simple summer recipes

It’s finally summer. The sun might be hiding right now but you need to be prepared for when it does, eventually, pop out because you never know when it’s coming back. It’s the joy of an English summer! When it finally does heat up all you want to do it sit outside and soak up the beautiful rays. To help you spend less time in the kitchen and more time outside, we’ve collated 5 simple summer recipes that are quick, healthy, and perfect for a hot day.

Asian Summer Noodles

All you’ll need for this low-carb dish is our Slim Spaghetti, some fresh veggies (we recommend carrots, zucchinis, peppers, and and onion), soy sauce, ginger, and a handful of peanuts. Start by pan-frying your veggies. Whilst cooking, splash soy sauce into the mix and then mince the ginger and add that when the veggies are nearly done. Finally, mix in your Slim Spaghetti and cook for 1 minute. Crush the peanuts and pop on top. Add cilantro if you fancy and you’ve got a simple summer meal.

Antipasto Pasta Salad

This dish is perfect if you have leftover antipasto from last weekend’s BBQ. Cook our Slim Pasta Penne for a minute and then prepare your antipasto. Olives, cheeses, meats, pop it all into a bowl and toss your penne in. Simple, quick, and low carb! copy-of-604px-x-403px-untitled-design-1

Bruschetta Pasta Salad

This simple dish requires chopped tomatoes, red onion, basil, garlic, and parmesan. Use our Slim Penne as your base, then combine with the other ingredients. That’s it! Quick and low carb.

Sesame Noodle Salad

This fresh and healthy salad requires rice vinegar, veggies (radishes, cucumbers, and peppers work well), hot sauce, sesame seeds, and our new Slim Noodles Thai Style. Prepare the low carb noodles and combine with the rice vinegar and hot sauce. Then, prepare your veggies and combine with your seasoned noodles. Once combined, sprinkle your sesame seeds on top. Great for a low carb lunch too!
