Peanut Butter Noodle Salad (serves 2)
228cal - 15g carbs - 8g protein - 8g sugar - 3g fibre - 15g fat
Ingredients:
- 1 Pack Slim Noodles
- 3 tbsp peanut butter
- 1 tbsp soy sauce
- 1 tbsp rice vinegar
- 1/2 tbsp sesame oil
- 1 tbsp honey
- 1/4 tsp chilli flakes
- 1/2 tsp garlic granules
- Juice of 1 lime
- Shredded carrot
- Red pepper
- Cucumber
- Salad leaves
Method:
- Mix the pesto and the sticky rice until well combined
- Form 4 balls with the mix and then add 1 cube of Mozarella in the middle
- For the coating, dip each ball in flour, then egg and lastly breadcrumbs
- Cook in an air fryer at 180c for 15 minutes
