Thai Basil Tofu (serves 2)

389 cal - 18g carbs - 28.5g protein - 9g sugar - 6g fibre - 20g fat

Ingredients:
  • 1 pack Eat Water Slim noodles
  • 1/3 cup vegetable stock
  • 1 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp erythritol
  • 1 tbsp brown sugar
  • 1 tbsp Olive oil
  • 400g tofu
  • 1/4 cup diced onions
  • 4 cloves of garlic minced
  • 1/2 red chilly chopped
  • 1/2 cup chopped Basil leaves
Method:
1. Mix the stock, oyster sauce, fish sauce, erythritol and brown sugar
2. Heat the oil, add the chicken and stir fry for around 5 minutes
3. Stir in the onions, garlic, chillies and continue to cook for further 2-3 minutes
4. Add the sauce mixture and cook until it glazed the tofu, remove from the heat
5. Stir in the noodles, cook for 5 minutes, add basil and cook for further 20 seconds
